THE Best Sweet Potato Casserole Recipe

It wouldn’t be Thanksgiving without it!

About Thirty years ago my friend Holly gave me this recipe and my family insists on it every year. I have to say, some family members eat more of the sweet crunchy topping than the casserole underneath. But you know when you eat something that is so GOOD you think about it for days and wish you had more? THIS is one of those foods.

Filling

  • 4 lbs raw sweet potatoes, diced into large chunks and boiled
  • 2 large eggs
  • 1/4 cup unsalted butter, softened
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon cinnamon (optional)

Topping

  • 5 tablespoons unsalted butter, melted
  • 2/3 cup light brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

Instructions

  1. Boil the chunks of sweet potatoes until they are fork tender. Drain well and transfer to a large bowl.

To the large bowl with the sweet potatoes, add the eggs, butter, milk, brown sugar, granulated sugar, vanilla , salt, nutmeg, cinnamon, (I recommend using all the options) and beat with a hand mixer (I use my kitchen aid for this and just about everything) https://amzn.to/49OHySZ on medium high until combined and fluffy. This makes preparation and clean up so easy!

  1. Turn out into the baking dish, smoothing the top lightly with a spatula, set aside.

Make the Topping

1.To a large microwave safe bowl, add the butter and heat on high power to melt, about one minute

2. Add the brown sugar, flour, salt, and tosswith a fork or your fingers until moist crumbs form.

3. Add the pecans and toss to incorporate

4. Evenly turn topping out over filling

5. Bake the sweet potato casserole for about 45 minutes (or cover and refrigerate for up to 24 hours if your prepping in advance) or until top is lightly golden browned, set on the edges, and set in the center. This pecan with brown sugar topping is the best.
